Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup bananas, mashed
  • 1 1/2 cups plain flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup apple, peeled and finely chopped

  1. Cream shortening; gradually add sugar, beating well.
  2. Add eggs one at a time, beating after each addition.
  3. Stir in mashed bananas and chopped apple.
  4. Combine plain flour, baking soda, and salt.
  5. Add dry ingredients to the creamed mixture, stirring just enough to blend.
  6. Spoon batter into a greased and floured pan.
  7. Bake for 1 hour.
  8. Cool in the pan for 10 minutes.
  9. Cool completely on a wire rack.
