Ingredients

  • 2 to 2 1/2 yellow squash, cut up
  • 1/2 cup sour cream
  • 4 tablespoons butter, melted
  • 2 green onions, including tops, minced
  • salt and pepper to taste
  • buttered fresh bread crumbs
  • 1/4 cup grated Parmesan or Romano cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the yellow squash into small pieces and set aside.
  3. In a mixing bowl, combine sour cream, melted butter, and minced green onions.
  4. Add the chopped squash to the mixture and season with salt and pepper to taste.
  5. Transfer the mixture to a buttered baking dish.
  6. Sprinkle buttered fresh bread crumbs evenly over the top of the casserole.
  7. Sprinkle grated Parmesan or Romano cheese over the bread crumbs.
  8. Bake in the preheated oven for about 30 minutes, until bubbly and golden on top.
