Ingredients

  • 1/3 cup soft margarine
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Cream margarine and sugar together.
  2. Add eggs one at a time and mix well.
  3. Stir in mashed bananas.
  4. Sift dry ingredients (flour, baking powder, baking soda, salt) and add to the creamed mixture.
  5. Beat until smooth.
  6. Pour batter into greased or paper-lined muffin tin.
  7. Bake at 350°F (175°C) for 20 minutes.
