Banana Cereal Bread

Ingredients

  • 1 1/2 c. oatmeal
  • 1 c. milk
  • 1 3/4 c. flour
  • 1 c. sugar
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/4 c. melted shortening
  • 1 c. mashed bananas (2 medium)

Instructions

  1. Combine cereal and milk; let stand 5 minutes.
  2. Mix flour with sugar, baking powder and salt.
  3. Stir egg, shortening and bananas into cereal mixture.
  4. Add flour mixture.
  5. Stir just until all flour is moistened.
  6. Pour into greased 9 x 5-inch loaf pan.
  7. Bake at 350° for 50 to 55 minutes.
  8. Cool in pan 10 minutes.
  9. Remove from pan and finish cooling on rack.
  10. Wrap in foil and store overnight before slicing.
