Ingredients

  • 2 medium potatoes, pared and cubed
  • 1/2 cup boiling water
  • 3 tablespoons butter or margarine
  • a dash of pepper
  • 1 1/2 cups chopped, cooked ham
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 cup chopped onion
  • 3 tablespoons flour

Instructions

  1. Cook cubed potatoes in boiling water until tender, about 10 minutes.
  2. Drain the potatoes and reserve the cooking liquid.
  3. Add enough water to the reserved liquid to make 1 cup of potato water.
  4. In a saucepan, cook chopped onion in butter until tender.
  5. Blend in flour and a dash of pepper.
  6. Add milk and potato water all at once.
  7. Cook and stir until the mixture thickens and bubbles.
  8. Add chopped ham and shredded cheese; stir to melt the cheese.
  9. Add the cooked potatoes.
  10. Season with salt to taste and serve.
