Bananaberry Muffins

Ingredients

  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoons Salt
  • 1 cup Sugar
  • 1/3 cups Butter, Room Temperature
  • 2 whole Eggs
  • 1 cup Mashed Ripe Bananas (about 2 Med Ones)
  • 1 teaspoon Vanilla
  • 1 cup Fresh Blueberries (rinse And Pat Dry)

Instructions

  1. Preheat oven to 350 degrees and line a tray with muffin cup papers.
  2. Sift flour, baking powder, salt and sugar together with a wire whisk.
  3. Add butter, eggs, bananas and vanilla.
  4. Mix on low until just combined.
  5. Fold in blueberries. Reserve some to place on the tops of the muffins.
  6. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  7. Serve while still warm with butter.
  8. Makes 12-15 muffins.
