Ingredients

  • 2 1/2 or 3 lb chicken
  • salt and pepper
  • hot water
  • 1 large onion

Instructions

  1. Cut the chicken in half.
  2. Sprinkle the chicken with salt and pepper.
  3. Place the chicken in a pan with enough hot water to just cover the bottom.
  4. Slice one large onion for each chicken and place slices under the wings and legs.
  5. Bake the chicken at 350°F for 30 minutes.
  6. Turn the chicken and bake for an additional 30 minutes.
  7. Pour about three-quarters of the sauce over the chicken and bake for 1 hour longer, skin sides up.
  8. Just before serving, pour the remaining sauce over the chicken.
