Ingredients

  • 1/2 cup butter or margarine
  • 1 envelope Lipton onion soup mix
  • 2 tablespoons cornstarch
  • 20 ounces pineapple chunks, drained
  • 3/4 cup pineapple juice (reserved)
  • 2 tablespoons lime or lemon juice

Instructions

  1. Preheat oven to 350°F.
  2. In a small saucepan, melt butter over medium heat.
  3. Stir in the onion soup mix and cornstarch.
  4. Add the reserved pineapple juice and lime or lemon juice; cook until the mixture thickens slightly.
  5. Arrange the split and boned chicken breasts and drained pineapple chunks in an oblong baking dish.
  6. Pour the onion mixture over the chicken and pineapple.
  7. Bake for 45 minutes or until the chicken is tender, basting occasionally.
  8. Optional: Bake for about 1 hour for extra tenderness and flavor.
