Ingredients

  • 1/4 cup butter or margarine
  • 1/4 pound fresh sliced mushroom pieces, drained
  • 1 medium onion, diced
  • 1 medium green pepper, diced
  • 1 tablespoon chopped parsley
  • 3/4 teaspoon thyme
  • 1/4 cup flour
  • 2 cups chicken broth
  • 3 to 4 cups diced cooked chicken
  • 1 (4 oz.) jar diced pimento, drained
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons salt
  • 8 ounces spaghetti
  • 1 (10 to 11 oz.) can Cheddar cheese soup

Instructions

  1. Melt butter or margarine in a large skillet; add mushrooms, onion, green pepper, parsley, and thyme; cook until vegetables are tender.
  2. Stir in flour, soup, and salt; cook until mixture is thickened.
  3. Add cooked chicken, drained pimentos, and lemon juice; keep warm until ready to serve.
  4. Cook spaghetti according to package instructions; drain.
  5. Toss cooked spaghetti with the chicken mixture, combine well, and serve hot.
