Ingredients

  • 1 muskrat, cut into pieces
  • 2 Tbsp. white vinegar
  • 1/4 c. lemon juice
  • 1/8 tsp. black pepper
  • cayenne pepper to taste
  • 3 Tbsp. vegetable oil
  • 2 Tbsp. ketchup
  • 1/2 tsp. salt
  • 1/8 tsp. garlic salt

Instructions

  1. Remove muskrat pieces and place them in a shallow, foil-lined pan.
  2. Make a sauce from white vinegar, lemon juice, black pepper, cayenne pepper, vegetable oil, ketchup, salt, and garlic salt, then brush it onto the muskrat pieces.
  3. Pour any remaining sauce into the bottom of the pan.
  4. Bake uncovered at 300°F for 90 minutes or until tender, basting every 15 minutes.
