Barley Salad

Ingredients

  • 2/3 c. barley
  • 1 medium carrot, coarsely shredded
  • 1 medium green pepper, quartered and cut into thin strips
  • 1 green onion (scallion)
  • 1/4 c. salad oil
  • 1/4 c. minced parsley
  • 1 Tbsp. sugar
  • 1 Tbsp. vinegar

Instructions

  1. Heat 2 quarts water to boiling.
  2. Add barley; bring to boil, reduce heat and simmer 40 minutes or until barley is tender. Rinse with cold water; drain.
  3. Place vegetables and barley in large bowl.
  4. Cut onions into 2-inch pieces.
  5. Brown in hot salad oil.
  6. Discard green onion.
  7. Add oil to barley mixture, tossing to coat.
  8. Stir in rest of ingredients.
  9. Cover and refrigerate two hours.
