Barley Salad
Ingredients
Instructions
- Heat 2 quarts water to boiling.
- Add barley; bring to boil, reduce heat and simmer 40 minutes or until barley is tender. Rinse with cold water; drain.
- Place vegetables and barley in large bowl.
- Cut onions into 2-inch pieces.
- Brown in hot salad oil.
- Discard green onion.
- Add oil to barley mixture, tossing to coat.
- Stir in rest of ingredients.
- Cover and refrigerate two hours.
