Ingredients

  • 2 oz. unsweetened chocolate
  • 4 oz. unsalted butter
  • 1/2 tsp. vanilla extract
  • 2 large eggs
  • 1 c. walnut halves or large pieces
  • 4 oz. semi-sweet chocolate
  • 1/4 tsp. salt
  • 1 c. granulated sugar
  • 1/4 c. sifted all-purpose flour

Instructions

  1. Adjust a rack 1/3 up from the bottom of the oven.
  2. Preheat oven to 325°F (163°C).
  3. Place both chocolates and butter in a 3-quart heavy pan over medium heat.
  4. Stir until melted and smooth.
  5. Remove from heat.
  6. Stir in salt, vanilla extract, sugar, and eggs, one at a time, until fully blended.
  7. Add sifted all-purpose flour and stir briskly for 1 minute until the mixture is smooth and shiny and pulls away from sides of the pan.
  8. Stir in walnut halves or large pieces.
  9. Turn an 8-inch square pan upside down.
  10. Center a 12-inch square of shiny side down aluminum foil over the pan.
  11. Fold down sides and corners to shape of the pan.
  12. Remove foil and place inside the pan.
  13. Paint melted butter on the foil inside the pan.
  14. Pour the brownie mixture into the prepared pan.
  15. Bake for 45 minutes or until a pick inserted comes out clean.
  16. Remove from oven and cool completely in the pan.
  17. Place the pan in the freezer for about an hour until the cake is firm.
  18. Cover with a cutting board and turn the pan over.
  19. Remove the foil and cut the cake into quarters.
