Ingredients

  • 1 1/2 lb. stew meat
  • salt and pepper
  • 5 potatoes, sliced
  • 2 Tbsp. sugar
  • 4 carrots, sliced
  • 1 (12 oz.) V-8 juice
  • 1 medium onion, sliced

Instructions

  1. Put meat in a greased 9 x 13‑inch casserole dish.
  2. Layer sliced onion, potatoes, and carrots over the meat.
  3. Season with salt and pepper.
  4. In a small bowl, combine sugar, cornstarch, and V‑8 juice; shake until smooth.
  5. Pour the mixture over the vegetables.
  6. Cover the dish with foil.
  7. Bake for 4 hours at 250°–275°F.
  8. Serve hot.
