Basic Fish Stock

A flavorful, aromatic fish stock infused with fresh vegetables, herbs, and white wine, perfect for enriching soups, sauces, and seafood dishes with a delicate seafood essence.

Ingredients

  • fresh fish trimmings, heads, bones
  • 2 carrots, sliced
  • 2 celery stalks, chopped fine
  • 1 onion, chopped fine
  • 6 parsley stems
  • 1 cup white wine
  • juice of 1 lemon
  • 2 bay leaves
  • 1 teaspoon salt
  • 8 peppercorns
  • pinch of leaf thyme
  • 2 quarts water

Instructions

  1. Combine all ingredients with water and bring to a simmer.
  2. Cook for 30 minutes.
  3. Add fish heads and bones (about 1 pound) and simmer for an additional 15 minutes.
  4. Strain the stock to remove solids.
  5. Use immediately or store in the refrigerator for up to 3 days, or freeze for future use.
