  2. If using a copper bowl, omit the cream of tartar.
  3. Beat the egg whites until soft peaks form.
  4. Add the cream of tartar and continue beating until stiff peaks form.
  5. Gradually add the sugar, a little at a time, beating until the mixture is glossy and firm.
  6. Add vanilla extract and beat briefly to combine.
