Ingredients

  • 4 eggs
  • 2 c. sugar
  • 2 c. pumpkin
  • 1 c. vegetable oil
  • 1/2 c. raisins
  • 1/2 c. chopped nuts
  • 3 1/2 c. flour
  • 2/3 c. plus 2 Tbsp. orange juice
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. allspice
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger

Instructions

  1. Preheat oven to 350°F. Grease two loaf pans.
  2. In a large bowl, beat eggs and sugar until well combined.
  3. Stir in pumpkin and vegetable oil until smooth.
  4. Add raisins and chopped nuts, mixing evenly.
  5. In a separate bowl, sift together flour, baking soda, baking powder, salt, allspice, cinnamon, and ginger.
  6. Gradually add dry ingredients to the pumpkin mixture, mixing just until combined.
  7. Stir in orange juice.
  8. Pour batter into prepared loaf pans.
  9. Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before removing from pans and serving.
