Ingredients

  • 1 very large onion
  • 3/4 c. olive oil
  • 4 (12 oz.) cans tomato paste
  • 3 tsp. sugar
  • 4 cloves garlic, crushed in pan while using
  • 4 (28 oz.) cans tomato sauce
  • 3 tsp. salt

Instructions

  1. In a large pot, cook onion and garlic in olive oil until onion is translucent and beginning to brown.
  2. Remove the onion and garlic with a slotted spoon.
  3. Drain any liquid back into the pot.
  4. Add tomato paste to the pot and return to heat, stirring frequently.
  5. Cook the tomato paste for about 5 minutes, ensuring it does not stick.
  6. Stir in tomato sauce, sugar, and salt.
  7. Simmer the sauce for at least 3 hours, stirring occasionally.
  8. Optionally add seafood, meat, or poultry to the sauce.
  9. Cool, transfer to containers, and freeze if desired.
