Ingredients

  • 4 lb. cut up fryer chicken
  • 4 oz. boiled ham
  • 4 large tomatoes, skinned, seeded, and chopped
  • 6 pimentos, seeded and chopped
  • 1 clove garlic
  • 2 shallots, chopped
  • 1 cup white wine
  • 1/4 teaspoon thyme

Instructions

  1. Flour the chicken pieces.
  2. Lightly shake off excess flour from the chicken.
  3. Melt butter or heat oil in a skillet over medium heat.
  4. Turn chicken in the skillet until pale golden, avoiding full browning.
  5. Transfer the chicken into a covered casserole dish.
  6. Add chopped tomatoes, pimientos, chopped ham, garlic, shallots, white wine, thyme, bay leaf, salt, pepper, and chopped parsley to the dish.
  7. Cover and bake in a 300°F (150°C) oven for about 15 minutes.
