Ingredients

  • 1 cup sifted flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 egg yolks
  • 2/3 cup beer
  • 2 tablespoons oil
  • 3 to 4 large Spanish onions
  • 2 egg whites

Instructions

  1. Sift flour, salt, and pepper into a bowl.
  2. Beat together egg yolks, beer, and oil.
  3. Add to flour mixture, stirring only until smooth.
  4. Let stand for 1 hour.
  5. Slice onions 1/8 to 1/4-inch thick and separate into rings.
  6. Beat egg whites until stiff but not dry and fold into batter.
  7. Dip onion rings in batter, coating thoroughly.
  8. Heat oil (2 inches deep) and fry onion rings without crowding until brown on both sides.
  9. Drain on paper towels.
