Ingredients

  • 1 lb. lean chuck, in 1/2-inch chunks
  • 1 (8 oz.) can tomato paste
  • 1 (14 1/2 oz.) can stewed tomatoes
  • 1/2 cup coarse chopped onion
  • 1 package bean thread
  • 4 1/2 cups water
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste

Instructions

  1. In a large stewpot, brown the beef chunks and add the chopped onion.
  2. Cook for 5 minutes, then add 4 cups of water and bring to a boil.
  3. Add the tomato paste and stewed tomatoes.
  4. After 5 minutes, add the bean threads.
  5. Cook over medium heat for 20 minutes, then add the mixed vegetables.
  6. Lower the heat and simmer until the beef is tender.
  7. Add salt and pepper to taste and serve.
