Ingredients

  • 2 Tbsp. olive oil
  • 1 large green bell pepper, coarsely chopped (1 1/4 c.)
  • 1 tsp. minced garlic
  • 2 (16 oz. each) cans black beans, undrained
  • 1 (4 oz.) jar, sliced pimientos, drained
  • 3 Tbsp. red wine vinegar
  • 1/2 tsp. dried oregano

Instructions

  1. Heat oil in a large skillet.
  2. Add green pepper and garlic. Cook over medium heat, stirring often, 3 to 5 minutes, until pepper is crisp-tender.
  3. Stir in remaining ingredients, increase heat and bring to a boil.
  4. Reduce heat, cover and simmer 5 to 7 minutes, until pepper is tender.
  5. Serves 4.
