Beef Enchiliada'S

Ingredients

  • 3 lb ground beef, cooked and drained
  • 1 large onion, chopped
  • 1 pkg Enchilada mix
  • 1 small can tomatoes sauce
  • 3 large potatoes, microwave until firm and peel
  • 1 can whole kernel corn
  • 1 c cheddar cheese, shredded for mixture
  • 2 pkg flour tortilla
  • 2 can Enchilada sauce, mild

Instructions

  1. Brown and drain beef and onions. Mix Enchilada seasoning mix with meat and onion. Add tomato sauce, corn, and cheese. Microwave potatoes several minutes until a knife will go easily through them. Then peel and chop into small cubes and add to mixture and stir well. Then put just enough Enchilada sauce on bottom of pan so that they don't stick. Put mixture (a good size spoon) onto each tortilla and roll up and lay in pan with sauce. Then use the rest of the Enchilada sauce to cover tops of rolls and top with more cheese.
