Beef Ragout(Microwave)

Ingredients

  • 1 medium onion, thinly sliced and separated into rings
  • 1 medium green pepper, thinly sliced
  • 1 Tbsp. olive oil
  • 1 1/2 lb. boneless beef chuck steak, cut into 1/2-inch cubes
  • 1 (17 oz.) can stewed tomatoes
  • 1 (10 3/4 oz.) can condensed beef broth
  • 1 (6 oz.) can tomato paste
  • 1 large potato, cut into 1/2-inch cubes
  • 2 Tbsp. all-purpose flour

Instructions

  1. Combine onion, green pepper and olive oil in a 3-quart casserole.
  2. Microwave at High until peppers are tender, 2 to 5 minutes.
  3. Stir in remaining ingredients.
  4. Cover; microwave at High for 10 minutes.
  5. Reduce power to Medium.
  6. Microwave until beef and potatoes are tender, 50 minutes to 1 hour, stirring after 30 minutes.
  7. Let stand 5 to 10 minutes.
  8. Serve over rice, noodles or potatoes, if desired.
