Beefy Enchiladas

Ingredients

  • 1 1/2 c. cooked shredded beef
  • 1 1/2 c. shredded sharp Cheddar cheese
  • 1/2 c. chopped onion
  • 12 corn tortillas
  • 1 can cream of mushroom soup
  • 1 can tomato soup
  • 1 can mild enchilada sauce

Instructions

  1. Combine beef, 1/2 cup cheese and onion; set aside.
  2. Combine soups and enchilada sauce.
  3. Top each tortilla with 1 heaping tablespoon of meat mixture.
  4. Roll up.
  5. Place seam side down in 13 x 9-inch baking dish.
  6. Pour sauce over and top with remaining cheese.
  7. Bake at 350° for 25 to 30 minutes.
  8. Makes 6 servings.
