Ingredients

  • 2 c. sugar
  • 5 eggs
  • 1 3/4 c. salad oil
  • 3 c. all-purpose flour
  • 3 tsp. baking soda
  • 6 Tbsp. cocoa
  • 2 1/8 c. beets and juice, liquefied in blender
  • 2 tsp. salt
  • 2 tsp. vanilla

Instructions

  1. Mix all dry ingredients.
  2. Add blended beets.
  3. Mix at medium speed.
  4. Pour into a 9 x 13-inch pan.
  5. Bake 1 hour at 350°.
