Ingredients

  • 4 to 5 potatoes, sliced thin
  • 1 medium bell pepper, chopped
  • 1/2 large onion, grated or sliced thin
  • 1 can cream of mushroom soup
  • 1 cup milk
  • salt

Instructions

  1. Spread a layer of sliced potatoes on the bottom of a round casserole dish (1 1/2 to 2 quarts).
  2. Pour half of the mushroom soup and milk mixture over the potatoes.
  3. Spread grated or sliced thin onion, chopped bell pepper, and seasonings on top.
  4. Repeat with remaining ingredients, layering potatoes, soup mixture, and vegetables.
  5. Bake for 1 hour and 15 minutes at 350°F (175°C).
  6. Bake an additional 15 to 20 minutes uncovered to brown the top.
