Ingredients

  • 1 1/2 cups flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 1/2 teaspoons vanilla extract
  • 3 tablespoons unsalted butter

Instructions

  1. Whisk together the flour, sugar, salt, and nutmeg in a bowl.
  2. In another bowl, beat the eggs until well combined.
  3. Whisk in the milk and vanilla extract into the eggs.
  4. Melt the unsalted butter over medium heat.
  5. Add the melted butter into the milk mixture and whisk to combine.
  6. Pour the wet ingredients into the dry ingredients and whisk until well blended.
  7. Add a small amount of oil to a preheated iron skillet.
  8. Fry the pancakes until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
