Belle'S Squash

Ingredients

  • 8 to 10 yellow squash
  • 6 crackers, crumbled
  • 1/2 c. milk
  • 2 eggs
  • 1 onion, grated
  • 1 green pepper, chopped
  • 1/2 c. cheese, grated
  • salt and pepper to taste

Instructions

  1. Cook squash in small amount of salted water until tender. Drain and mash.
  2. Add cracker crumbs, milk, eggs, onion and cheese. Season with salt and pepper.
  3. Spoon into greased 1-quart casserole; dot with butter.
  4. Bake at 350° for 1 hour.
