Ingredients

  • 2 (6 oz.) pkg. cream cheese
  • 1/2 small onion, grated
  • green food coloring
  • mayonnaise
  • 3 to 4-inch cucumber, grated and drained of juice
  • dash of salt

Instructions

  1. Mash the cream cheese with the grated cucumber pulp until well combined.
  2. Add the grated onion, a pinch of salt, and enough mayonnaise to achieve a smooth spread.
  3. Mix in a small amount of green food coloring to create a very pale green filling.
  4. Serve as a spread on bread, crackers, or as a dip.
