Ingredients

  • 1/2 cup sugar
  • 2 tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1 cup water
  • 3 fresh
  • frozen blackberries
  • a mixture of berries
  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tbsp. shortening
  • 1 egg, lightly beaten
  • 2 tbsp. milk

Instructions

  1. Berries: In a saucepan, combine sugar, cornstarch, salt and cinnamon from the berry ingredients.
  2. Add water.
  3. Cook until mixture boils and thickens.
  4. Stir in berries and cook over low heat for 5 minutes.
  5. Pour into a greased 8 square baking pan.
  6. Set aside.
  7. Combine flour, baking powder and salt in a bowl.
  8. Cut in shortening untilcoarse crumbs form.
  9. In another bowl, mix egg and milk.
  10. Add to flour mixture; mix to make a smooth dough.
  11. Knead for several minutes.
  12. Roll into a 12x8-inch rectangle.
  13. Spread with butter.
  14. Combine sugar, lemon peel and cinnamon; sprinkle over dough.
  15. Starting at a long end, roll up; seal edges.
  16. Cut into 9 slices.
  17. Place slices (still rolled up) over berry mixture.
  18. Bake at 400F for 22-25 minutes or until golden brown.
