Ingredients

  • 1 lb. 10x sugar
  • 1 1/4 cup peanut butter
  • 1/2 cup butter
  • 1 teaspoon vanilla, butter and nut flavoring
  • 1 lb. dark chocolate candy coating wafers

Instructions

  1. In a large bowl, mix butter, peanut butter, and flavoring.
  2. Add sugar gradually, mixing well after each addition.
  3. Roll the mixture into 3/4-inch balls and place on waxed paper on a cookie sheet. If the mixture sticks to your hands, add a little more sugar.
  4. Ensure the mixture isn't too dry.
  5. Put the balls in the freezer until very well chilled.
  6. Melt the dark chocolate candy coating wafers over hot water in a double boiler.
  7. Insert a toothpick into the center of an almost frozen or frozen ball.
  8. Dip the ball in melted chocolate, covering all but the top, and let excess drip off.
  9. Place the dipped balls back on waxed paper.
  10. Remove the toothpick from each buckeye.
  11. Repeat the dipping process for remaining balls. When buckeyes reach room temperature, close the hole at the top.

Tips & Substitutions

For a smoother consistency, ensure the butter is softened before mixing with peanut butter and flavoring. If you're looking for a lighter touch, consider using natural peanut butter. If you prefer a sweeter taste, you can substitute some of the 10x sugar with powdered coconut sugar. For additional flavor, a pinch of sea salt can enhance the overall taste.

Serving Suggestions

These buckeyes make a delightful treat for parties or as a sweet snack alongside coffee or tea. They pair beautifully with Diane'S Spring Garden Vegetable Pie for a balanced spread. For an extra touch, serve with a glass of cold milk or a scoop of vanilla ice cream, making it a perfect dessert on a warm day.

Storage & Reheating

Store leftover buckeyes in an airtight container at room temperature for up to a week. If you want to keep them longer, refrigerate them for up to two weeks. They can also be frozen for up to three months; just make sure to layer them with parchment paper to avoid sticking together.

How can I make these buckeyes more festive for holidays?

To make your buckeyes more festive, consider drizzling melted white chocolate on top for a decorative touch. You can also sprinkle colored sugar or edible glitter on the melted chocolate before it sets for a festive appearance.
