Ingredients

  • 2 1/2 cups sugar
  • 3 tablespoons flour
  • 2 tablespoons cornstarch
  • 3 tablespoons butter
  • 3 cups milk
  • 4 large eggs
  • pinch of salt

Instructions

  1. Combine sugar, flour, and cornstarch in a large saucepan.
  2. Add butter, milk, and slightly beaten egg yolks to the mixture, then add a pinch of salt.
  3. Place 1/2 cup of sugar in a heavy skillet over medium heat.
  4. Stir the sugar in the skillet frequently until it begins to melt and caramelize, bubbling all over.
  5. When the sugar is nearly all melted and caramelized, stir well and remove from heat.
  6. While stirring constantly, pour the hot custard mixture into the caramelized sugar in the skillet.
  7. Continue cooking and stirring until the mixture is smooth, creamy, and thickened.
  8. Remove from heat and pour into a prepared pie crust or serving dish.
