- Combine sifted flour, sugar, and grated lemon peel in a bowl.
- Cut in butter or margarine until the mixture is crumbly.
- Add the slightly beaten egg yolk and vanilla; blend well.
- Pat one-third of the dough on the bottom of a 9-inch spring-form pan with sides removed.
- Bake at 400°F (200°C) for about 6 minutes or until golden; then cool.
- Butter the sides of the pan and attach it to the bottom.
- Pat the remaining dough evenly on the sides of the pan to a height of 2 inches.
