Ingredients

  • 1 cup sifted enriched flour
  • 1/4 cup sugar
  • 1 teaspoon grated lemon peel
  • 1/2 cup butter or margarine
  • 1 slightly beaten egg yolk

Instructions

  1. Combine sifted flour, sugar, and grated lemon peel in a bowl.
  2. Cut in butter or margarine until the mixture is crumbly.
  3. Add the slightly beaten egg yolk and vanilla; blend well.
  4. Pat one-third of the dough on the bottom of a 9-inch spring-form pan with sides removed.
  5. Bake at 400°F (200°C) for about 6 minutes or until golden; then cool.
  6. Butter the sides of the pan and attach it to the bottom.
  7. Pat the remaining dough evenly on the sides of the pan to a height of 2 inches.
