Ingredients

  • 2 eggs
  • 1/4 cup sugar
  • 3/4 cup corn syrup
  • 1/3 cup lemon juice
  • 1 ounce melted butter
  • 1 tablespoon cornstarch
  • 2 teaspoons lemon peel
  • 1/4 cup sugar

Instructions

  1. Mix eggs, sugar, corn syrup, lemon juice, melted butter, cornstarch, and lemon peel until well combined.
  2. Pour the mixture into an unbaked pie crust.
  3. Sprinkle 1/4 cup sugar evenly over the top of the pie.
  4. Bake at 325°F for 40 minutes until set and golden.
  5. Allow to cool before serving.
