Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs or egg substitute

Instructions

  1. Preheat oven to 400°F.
  2. In a medium-sized bowl, blend together the flour, sugar, salt, and baking powder thoroughly.
  3. In a 2-cup measure, pour in the milk, vegetable oil, and eggs or egg substitute, then blend thoroughly.
  4. Pour the liquid ingredients into the dry ingredients and do not blend thoroughly.
  5. Using a wire whisk or fork, blend the mixture for 20 seconds and then stop.
  6. Fill greased muffin cups two-thirds full with batter.
  7. Bake for 15 to 20 minutes or until muffins are lightly browned.
