Ingredients

  • 9 cups water
  • 1 cup salt
  • 1 gallon cucumbers, sliced
  • allspice
  • cloves
  • stick cinnamon

Instructions

  1. Mix water and salt to cover the cucumbers.
  2. Wrap allspice, cloves, and cinnamon in cheesecloth and place in each gallon.
  3. Let set for 4 days.
  4. Drain and soak in alum water (1 tablespoon alum to 1 quart water) for 1 day.
  5. Drain, then soak in a mixture of half vinegar and half water for 1 day and drain.
  6. Mix syrup of 1 cup vinegar and 3 cups sugar.
  7. Bring the syrup to a boil and pour over the pickles.
  8. Bring the mixture to a boil four mornings in a row and pour into jars or a large crock.
