- Mix water and salt to cover the cucumbers.
- Wrap allspice, cloves, and cinnamon in cheesecloth and place in each gallon.
- Let set for 4 days.
- Drain and soak in alum water (1 tablespoon alum to 1 quart water) for 1 day.
- Drain, then soak in a mixture of half vinegar and half water for 1 day and drain.
- Mix syrup of 1 cup vinegar and 3 cups sugar.
- Bring the syrup to a boil and pour over the pickles.
- Bring the mixture to a boil four mornings in a row and pour into jars or a large crock.
