- Mix together the flour, baking powder, salt, and sugar in a bowl.
- Add the egg, slightly beaten, then gently mix in the milk and oil until the flour disappears.
- Pour the batter into a greased muffin pan, filling each cup about two-thirds full.
- Bake at 400°F (200°C) for 20 to 22 minutes until golden brown.
- Remove from oven and let cool slightly before serving.
- Goes great with a main meal.
- The next day, butter and put under the broiler to toast.
