Ingredients

  • 2 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. sugar
  • 1 egg
  • 1 c. milk
  • 1/3 c. oil

Instructions

  1. Mix together the flour, baking powder, salt, and sugar in a bowl.
  2. Add the egg, slightly beaten, then gently mix in the milk and oil until the flour disappears.
  3. Pour the batter into a greased muffin pan, filling each cup about two-thirds full.
  4. Bake at 400°F (200°C) for 20 to 22 minutes until golden brown.
  5. Remove from oven and let cool slightly before serving.
  6. Goes great with a main meal.
  7. The next day, butter and put under the broiler to toast.
