Big Jim's Potatoes are tender, flavorful baked potatoes infused with onions, butter, and herbs, perfect for grilling, oven baking, or campfire cooking, appealing to hearty appetites.

Ingredients

  • 5-6 medium potatoes
  • 1-2 medium onions
  • 1/2 stick butter or margarine
  • salt
  • pepper
  • garlic salt
  • herbs

Instructions

  1. Slice potatoes thinly, being careful not to cut all the way through so they stay together.
  2. Insert thin onion slices and pats of butter between the slices of potato.
  3. Sprinkle with salt, pepper, and garlic salt.
  4. Add herbs as desired.
  5. Wrap each potato tightly in aluminum foil.
  6. Cook on grill for 25-35 minutes or until potatoes are tender.
  7. Alternatively, cook in oven or campfire.
