Ingredients

  • 1 lb. box graham crackers
  • 1 lb. box seedless raisins
  • 1 lb. marshmallows
  • 1 jar maraschino cherries
  • 4 cups walnuts and pecans (unsalted and chopped)
  • Some walnut halves and cherry halves for decoration
  • 1 lb. candied fruit

Instructions

  1. In a large bowl, crush the graham crackers finely.
  2. Add the seedless raisins, candied fruit, chopped walnuts and pecans, and sliced maraschino cherries (save some nuts and cherries for decoration).
  3. Heat the evaporated milk and add the marshmallows; stir frequently until the marshmallows are melted and the mixture is smooth.
  4. Add the marshmallow mixture to the fruit and nut mixture and blend thoroughly.
  5. Line a fairly large or two small cookie tins with foil.
  6. Place a small glass in the center of the tin and pack the mixture around the glass firmly.
  7. Carefully remove the glass from the center.
  8. Cover the tin and refrigerate for two weeks before serving.
  9. The fruitcake will keep up to four months.
