Ingredients

  • 4 c. granulated sugar
  • 1/2 tsp. salt
  • 1 (12 oz.) can evaporated milk
  • 1 bag miniature marshmallows
  • 1 stick butter or margarine
  • 1 (12 oz.) bag chocolate chips
  • 3/4 tsp. vanilla

Instructions

  1. Place marshmallows, sugar, salt, and evaporated milk in a large saucepan (4 to 5-quart size) on medium-high heat until the marshmallows melt.
  2. After they have melted, the mixture will start to boil.
  3. Boil the mixture for 5 minutes, stirring constantly to prevent burning.
  4. Remove the saucepan from the heat and quickly beat in the butter (or margarine), chocolate chips, and vanilla.
  5. Pour the mixture into a buttered 9 x 13-inch pan.
  6. Place in the refrigerator to set.

Tips & Substitutions

For a creamier fudge, consider using half-and-half instead of evaporated milk. If you prefer a richer flavor, add a tablespoon of instant coffee granules to the mixture before boiling. Ensure constant stirring to avoid burning, especially as it thickens. You can also mix in nuts or dried fruits for added texture and flavor.

Serving Suggestions

Cut the fudge into small squares for easy serving, and consider pairing it with a scoop of vanilla ice cream for a delicious contrast. It also pairs beautifully with Grandma'S Lime Jello Salad for a refreshing balance. This fudge makes a great gift when wrapped in decorative packaging, perfect for holidays or special occasions.

Storage & Reheating

Store leftovers in an airtight container at room temperature for up to a week. For longer storage, refrigerate the fudge, where it can last for up to two weeks. To reheat, cut into squares and warm in the microwave for a few seconds to soften slightly before serving.

Frequently Asked Questions

Can I use dark chocolate chips instead of milk chocolate?

Absolutely! Substituting dark chocolate chips will give your fudge a deeper, more intense flavor. Just keep in mind that dark chocolate is less sweet, so adjust the sugar slightly if you prefer a sweeter fudge.

What can I do if my fudge doesn't set?

If your fudge doesn't set properly, it may need more time in the refrigerator. If it's still soft after several hours, you can try melting it down again and adding a little more sugar or chocolate before re-setting it.

Can I add flavors like peppermint or almond extract?

Yes, adding flavor extracts can enhance the fudge! A teaspoon of peppermint extract or almond extract can add a delightful twist. Just be careful not to overpower the chocolate flavor; start with a small amount and adjust to taste.
