Ingredients

  • 4 c. canned corn
  • 1 avocado, diced
  • 1/4 c. scallions
  • 1/4 c. low-fat mayonnaise
  • 1 Tbsp. lemon juice
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • dash of nutmeg
  • salt and pepper to taste
  • 6 c. salad greens
  • 4 hard-cooked eggs

Instructions

  1. Mix the canned corn, diced avocado, and scallions together in a bowl.
  2. Blend in the mayonnaise, lemon juice, chili powder, cumin, and a dash of nutmeg; mix well and chill.
  3. Spoon the salad into a bowl lined with salad greens.
