A hearty, rustic dish featuring tender roasted game birds infused with smoky bacon flavor, complemented by a rich browned flour gravy. Perfect for special gatherings or gourmet dinners.

Ingredients

  • 6 to 8 doves, quail or squab
  • salt to taste
  • pepper to taste
  • 2 strips bacon

Instructions

  1. Salt and pepper the birds.
  2. Place the birds in a roasting pan and lay bacon strips over them.
  3. Partly cover the pan with water.
  4. Steam covered on top of the stove for 2.5 to 3 hours or until tender.
  5. Spread flour in a shallow pan and bake in a 300°F oven for about 1 hour, stirring occasionally, until browned.
  6. Brown butter in a skillet.
  7. When the birds are tender, increase heat and add more water if necessary to make enough gravy.
  8. Sprinkle 3 or 4 tablespoons of browned flour over the gravy, adding the remaining flour to water in the pan.
  9. Pour hot browned butter over the birds.
  10. Place the pan in a 400°F oven and bake for 15 to 30 minutes.
