Ingredients

  • 1/4 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon pepper
  • 8 dressed quail
  • 1/2 cup bacon drippings
  • 1 cup milk
  • 1 cup chopped onion
  • 2 cans cream of celery soup
  • 1/2 teaspoon dried whole caraway seed

Instructions

  1. Combine flour and pepper in a small bowl.
  2. Dredge the dressed quail in the flour mixture and set aside.
  3. Melt bacon drippings in a Dutch oven over medium heat.
  4. Brown the quail on both sides in the Dutch oven.
  5. Remove the quail from the Dutch oven and discard any remaining drippings.
  6. In the same Dutch oven, combine milk, undiluted cream of celery soup, chopped onion, and dried caraway seed, stirring to mix.
  7. Add the browned quail back into the Dutch oven.
  8. Cover and cook over low heat, basting frequently, for about 30 minutes or until the quail are cooked through.
  9. Garnish with parsley sprigs if desired.
