Ingredients

  • 3 Tbsp. sugar
  • 1 c. shortening
  • 2 eggs
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • cinnamon and sugar mixture

Instructions

  1. Cream sugar and shortening together until well combined.
  2. Add beaten eggs and mix thoroughly.
  3. Measure and sift flour twice, then add baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the creamed mixture, mixing well after each addition.
  5. Shape the dough into a roll about an inch in diameter.
  6. Wrap the roll in wax paper and chill thoroughly in the refrigerator.
  7. Preheat oven to 400°F (200°C). Slice the chilled dough into thin rounds and place on an ungreased cookie sheet.
  8. Bake for 10 minutes or until lightly browned.
  9. While still hot, roll the cookies in cinnamon and sugar mixture.
