Ingredients

  • 3/4 cup whole almonds
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract or 2 teaspoons anise extract
  • 2 cups all-purpose flour
  • 7/8 cup granulated sugar
  • 1 teaspoon baking soda
  • dash of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place almonds in a shallow pan and bake until golden brown, about 8 to 10 minutes.
  3. Let almonds cool.
  4. Reduce oven temperature to 300°F (150°C).
  5. In a small bowl, whisk together the eggs, vanilla, and almond or anise extract.
  6. In a mixing bowl, combine the flour, sugar, baking soda, and salt.
  7. Add the egg mixture to the dry ingredients and mix until blended, about 1 minute.
  8. Cut the cooled almonds in half and mix them into the dough.
  9. Divide the dough in half.
  10. On a greased and floured baking sheet, pat each portion into a log about 1/2-inch high, 1 1/2 inches wide, and 12 inches long, spacing them about 2 inches apart.
  11. Bake at 300°F (150°C) for 40 to 50 minutes or until golden brown.
  12. Transfer the logs to a wire rack and let cool for 5 minutes.
