Ingredients

  • 1 cake yeast
  • 1/4 cup lukewarm milk
  • 4 cups flour
  • 1 teaspoon salt
  • 2 cups cracklings, chopped
  • 1 egg
  • 1 cup sour cream

Instructions

  1. Dissolve the cake yeast in lukewarm milk.
  2. Combine flour and salt, then work in chopped cracklings as for a pie crust.
  3. Mix the egg with sour cream and add to the flour mixture along with the dissolved yeast.
  4. Mix quickly until combined.
  5. Shape the dough into a ball and refrigerate for a few hours.
  6. Roll out on a floured board and fold up like a handkerchief.
  7. Chill the dough again.
  8. Repeat rolling, folding, and chilling about three times.
  9. Roll out on a floured board to 1/2-inch thickness and cut with a round cutter.
  10. Place the cut biscuits on a greased cookie sheet.
  11. Let the biscuits rise until about double in size.
  12. Bake at 350°F for 20 to 30 minutes.
