Ingredients

  • 2 1/2 cups sugar
  • 1/2 cup light Karo corn syrup
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 cup coarsely chopped black walnuts

Instructions

  1. Mix sugar, light Karo corn syrup, water, and salt in a saucepan.
  2. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  3. Reduce heat and cook without stirring until the syrup forms a ball in cold water (holds shape but is still plastic).
  4. Beat egg whites until stiff peaks form.
  5. While beating on high speed of an electric mixer, slowly pour the hot syrup over the egg whites.
  6. Continue beating until a small amount holds a soft peak when dropped from a spoon.
  7. Mix in vanilla and chopped black walnuts.
  8. Drop by teaspoons onto waxed paper to cool and set.
