Blender Casserole

Ingredients

  • 1 c. milk
  • 3 eggs
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. cubed Cheddar cheese
  • 4 medium potatoes, cubed
  • 2 Tbsp. butter
  • 1/2 green pepper, cut up (optional)
  • 1 small onion, chopped

Instructions

  1. Preheat oven to 350°.
  2. Grease 1 1/2-quart casserole.
  3. Put all ingredients in blender.
  4. Process on chop approximately 12 seconds or until all are chopped.
  5. Pour into casserole.
  6. Bake 1 hour, uncovered.
