Blender Chocolate Pie

Ingredients

  • 3 eggs, separated
  • 3 Tbsp cocoa
  • 1 cup sugar
  • 2 Tbsp cornstarch
  • 1/4 cup margarine
  • 1 cup milk
  • pinch of salt
  • 1 tsp vanilla

Instructions

  1. Put half of the milk in the blender; add the remaining ingredients except vanilla.
  2. Add the other half cup of milk and blend well.
  3. While blending, warm a heavy skillet over medium heat.
  4. Pour the blended mixture into the skillet and stir constantly.
  5. Bring to a boil, then remove from heat.
  6. Add vanilla to the mixture and pour into a cooled pie shell.
  7. Before beating egg whites, add 1 tablespoon cold water and a pinch of salt.
  8. Beat egg whites until stiff, gradually adding sugar.
  9. Spread the meringue on the cooled pie.
  10. Bake at 375°F for 10 minutes or until browned.
  11. Chill the pie before serving.
