Ingredients

  • 2/3 cup butter softened
  • 1 3/4 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 teaspoon baking powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 2/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup cold strong coffee

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease two 9-inch layer cake pans and dust lightly with cocoa or flour.
  3. In a large mixing bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  7. Gradually add the dry ingredients to the creamed mixture, alternating with milk, beginning and ending with dry ingredients.
  8. Mix in unsweetened cocoa powder and cold strong coffee until batter is smooth.
  9. Divide batter evenly between prepared cake pans.
  10. Bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
